Dough Enhancer plus Exercising

Hello loyal follower(s),

Today is the day the new cast iron Dutch Ovens arrived.  the dimensions were different than advertised on the website, therefore they were sent back. Mr Nut is going to revise the recipe for  the successful 82% Whole Wheat Artisan Bread so that it fits my existing Dutch Oven (base diameter of ten inches).

    Yesterday was a exercise day, and Mr Nut biked about eight miles to get to our athletic health club.

This is a picture of the Virgin river near our home in St  George, UT.  A one inch rain will cause some flooding and in December of 2010 more than ten inches fell in a short period and the river at the point in the picture was almost up to the bike path.  It was the second "100 years flood" in five years.









This was Mr Nut on a bike path bridge over the Virgin river on his way to workout.  The shirt was a windbreaker and not for warmth.

This is the main machine room at the Summit Athletic Club where Mr Nut and his wife (Cyndy) spent about six hours a week.  Mr Nut uses four machines on this floor. (fifteen minutes)

Cyndy rewards herself after the treadmill  by swimming one half mile.  This is an outdoor pool which is kept at 82 degrees even in January.

Recipe for Dough Enhancer follows:



Dough Enhancer

 Homemade Dough Enhancer:
1 cup wheat gluten                                Carbohydrates  24 g ;  Calories  480
2 tablespoons lecithin granules          Carbohydrates  2 g ;   Calories  60
1 teaspoon ascorbic acid crystals       Carbohydrates   0 g ; Calories  0
2 tablespoons powdered pectin          Carbohydrates  0 g ;   Calories  0
2 tablespoons unflavored gelatin       Carbohydrates 0 g ;     Calories  8
1/2 cup nonfat dry milk                         Carbohydrates  18      Calories 120
1 teaspoon powdered ginger              Carbohydrates   0 g ;  Calories 0
1 cup potato starch or potato flakes   Carbohydrates  51g ;   Calories  240


Total  Carbohydrates   95 g ;  Calories 900 per batch.  Batch size three cups.


Per Tablespoon, Carbohydrates   2 g;   Calories  19.
Mix together and store in an airtight container in the refrigerator. For 100% whole grain breads, use 3 tablespoons per loaf. Add to your recipe along with the flour.
Function of each ingredient:
wheat gluten;  improves the texture and rise of bread. 
lecithin; teams up with the gluten to make bread lighter.
ascorbic acid crystals (Vitamin C); helps the yeast work better.
pectin; adds moisture
gelatin; adds moisture
nonfat dry milk; helps the dough relax
ginger; is another yeast booster (you won’t taste it in the finished product). 
Potato flakes; helps strengthen the walls of the bubbles formed in the dough 
  Most of these are also preservatives, so they help keep your bread fresh longer, and they are all natural.
  It’s not necessary to use dough enhancer in white bread recipes, But you can! You’ll have higher loaves, and loaves that stay fresh longer.
