Corn Meal Waffles

Today I want to share my misadventures with waffles and waffle makers.  A few years ago I purchased a waffle iron for our cabin because it was cheap.  I was not satisfied with resulting waffles, they were underdone and generally unsatisfactory.


  This was the cheap waffle maker.  Looks great, designed for marketing more than functionality.  With a plastic cover you would be less likely to burn yourself.  Credit one for safety over functionality.




 Notice the design of the interior, it reflects the Belgium waffle design and the teflon coating was great.  Note: that was all that was good about  this waffle maker.  



 Looking at the  “guts” the waffle maker, it became  apparent  that most of cooking surface would be heated by direct conduction and yield uneven heating.  This system minimize the heating of the plastic outer shell of this piece of junk.




As you can see the outer shell  was just plastic.




 Now here is a “real” waffle iron that you can burn yourself on the heat radiating from the metal cover.  Credit one for functionality over safety.




 The interior waffle plates look just like the waffle makers from the 1950’s only they are Teflon coated.




The heating elements do not touch the waffle plates thus the heating is even and done by radiation ( not nuclear).  The other half of the waffle maker has the same kind of heating element.





Now for the production of the actual waffles.  First of all  Baking Powder has to be less than six months old. (according to the “experts”).  It looses it's leavening power after about six months.
Back in St George in June of 2012 Cyndy and I were invited to a waffle dinner.  We were so impressed with the waffles that I asked, and got  his recipe.  Since I had discarded my 1950’s non Teflon waffle iron, I had to wait until we were at our cabin in Minnesota to make the great waffles. 


 Here was an example of the results. It is only one-fourth of the output of the waffle maker, we ate the rest.

Corn Meal Waffles
Recipe from Richard Warnick of St George, UT

for 4 to 5 people 

2 cups all purpose flour
1/2 cup Corn Meal
4 teaspoons Baking Powder
1/2 teaspoon Sea Salt
2/3 cup Canola oil
2 eggs
2 1/2 cups milk
2 Tablespoons honey
for two people

1 cup all purpose flour
1/3 cup Corn Meal
2 teaspoons Baking Powder
1/4 teaspoon Sea Salt
1/3 cup Canola oil
1 egg
1 1/4 cups milk
1 Tablespoons honey
